SO much going on lately… I’m drowning in little life things.
& I’ve MISSED talking to y’all. Seriously, it’s been a LONG-ASS time! I hardly ever go longer than three days without actually blogging, so two weeks feels like. I promise I will not make this a habit.
♥ I have been phone-less for the last couple days! A classic tale: I was just boppin’ around, doing some studying the other day, when I smelled something burning. When I looked down at my phone, I saw that the plastic around my CHARGER had begun to melt…. definitely thought I was about to die bc dramatic. After a couple days of running around town, being on the phone with Apple for hours, & tracking down the FedEx man like a total stalker, I’m connected again! Finally, I can get back in the Instagram/Snapchat game. TBH– I’ve gotten SO much more work done sans iPhone. It really is kind of freeing….
♥ Speaking of PHONES, I launched an updated version of the Hustle + Halcyon app last week! I have added a ‘Daily Inspo’ section, so I can share my favorite quotes, TED Talks, links, songs, etc. with y’all on a ( mostly ) daily basis. Also, I’ll be sharing exclusive content on the app like recipes & such. It’s FREE, btw!
♥ My YouTube channel has finally made its way onto the ‘To-Improve/To-Do’ list. I’ve started with recipes like THIS hash brown recipe & outfit overviews. The STAR of the show: my cute little 3-Ingredient Individual Hash Browns! BTW: I made a full video ( at the bottom of this post! ) showing y’all how to make these babies.
Living the gluten-free life isn’t as difficult as people think, especially when I find recipes like this that prove gluten free eating isn’t boring. Gluten-free eating can actually being extremely indulgent when you find the right substitutes or take advantage of working with the foods you CAN eat.
I got the idea for this recipe from a Buzzfeed article about killer 3-ingredient recipes. This one includes frozen potatoes, green onions, & parmesan cheese, along with the usual salt/pepper & olive oil.
WHAT YOU’LL NEED
♥ 20 oz bag of shredded, frozen hash browns (or you can shred your own!)
♥ 3 green onions
♥ 1/2 cup grated parmesan
♥ 1 tsp salt
♥ 1/2 tsp pepper
♥ 2 Tbs olive oil
♥ Muffin tin and cooking spray/oil for baking
♥ Preheat oven to 350°.
♥ Chop up the green onion and add to a large bowl, followed but the frozen hash browns, the parmesan cheese, and the salt & pepper.
♥ Using a fork, mix until combined.
♥ Add the olive oil, and continue mixing until the mixture is evenly coated with the oil.
♥ Spray a 12-muffin tin with cooking spray ( I used coconut oil! ) and spoon in the hash browns evenly.
♥ Squish (<< super technical term ) hash browns into the muffin tin, so they are a little more densely packed.
♥ Transfer to oven and bake for 60-70 minutes ( keep them in longer to make them more crispy! ).
♥ Serve alone or with sauce of some sort. I really liked organic ketchup &/or salsa!
These are so cute for a little grab-and-go snack, as well as for an appetizer of sorts.
Little ones would probably love them as well.
