Let’s get down to business, because I don’t have very much to rant about today.
So, I get a lot of questions about easy/healthy recipes & SO many people ask me how I find the time to make nutritious meals at home ( because I eat at home A LOT ). Well, the answer is: I don’t have ANY fucking time.
My super-secret tip to eating healthy during the week: make-ahead meals.
WOW. WHAT AN IDEA. Call me a genius, idk.
Spaghetti Squash ( as many of you who follow me on snapchat [ payton_sartain ] know ) is my go-to. It’s such an easy make-ahead meal, & you kind of have to make it in bulk, because you cook the whole squash at once. If you can eat ALL of that in one sitting, I applaud you. Seriously, you have a special set of skills.
Don’t let the fact that its technically a veggie fool you! Spaghetti Squash is hearty & filling! Plus, it’s so versatile, so you can eat it on repeat in a ton of different ways. For example, I shared these Parmesan, Quinoa, & Spaghetti Squash Fritters not too long ago. I DIG IT.
WHAT YOU’LL NEED:
♥ 1 Spaghetti Squash
♥ Cooking Oil ( I usually use spray-on Coconut or Olive Oil! )
♥ Coarse Sea Salt & Pepper to Taste
♥ Set oven to 375°
♥ Cut Squash in Half ( either length- or width-wise ) & remove insides.
♥ Spray/Coat with cooking oil and top with salt/pepper.
♥ Bake in oven for 40 minutes, or until squash is soft.
♥ Remove from oven & let cool!
♥ With a fork, gently scrape the inside of the squash. It will come out like spaghetti!

I make the whole squash, obviously, and refrigerate the left-overs to eat for the next few days.
I’ll share the meatball recipe soon as well! I wanted to start with the basic, simple spaghetti squash first.
Some ideas for other toppings ( I experiment with these a bit ):
– Marinara, Mozzarella, & Parmesan
– Ground Turkey ( seasoned with Garlic ), Marinara, & Cheese of Choice
– Butter ( or EarthBalance VEGAN BUTTER *usually don’t like this kind of stuff but this is so good ), Garlic, & Parmesan
– Pesto & Chicken
