This Sunday, I’m forgoing the usual Sunday Morn Series to share this freaking addicting homemade granola recipe with y’all.
I’ve been majorly team-granola lately, because its a healthy little snack, & I’m trying to get back into ‘healthy’ mode after getting a little off-track. I’ll be drinking tons of water, drinking a little less alcohol, taking my probiotics, cutting down on sugar, and getting my ass to the gym much more this month. It’s detox-central at my home right meow (I may pop a few activated charcoal pills for good measure).
Follow me on snapchat (payton_sartain) for updates, and I’ll be doing a post on what works and what doesn’t as far as dropping the extra lbs after putting on a few too many (whooooops… it’s that Whataburger/BBQ/Beer in Texas that did me in). The worst part about it is… I feeeeel like shit. Eating (mostly) clean just makes me feel 3293747 times better. So that’s happening this month.
I found this Coconut Oil/Honey Granola recipe on Lovely Little Kitchen, which is a food blog that I strongly recommend perusing a bit. Recipes galore. I tweaked the recipe to my liking (as per usual) but you can find the original recipe on Lovely Little Kitchen here.
I like this granola on top of Greek yogurt with honey, cinnamon, & berries. OR with almond milk and those same toppings (like it’s cereal). OR on top of my favorite acai bowl recipe ever. OR OR OR by itself. Whatever, man. I just like having it around the house because it’s a quick hunger fix and this recipe is SO SO SO bomb.
♥ 1 cup almonds, divided (I used slivered almonds!)
♥ 3 cups old-fashioned rolled oats
♥ 1/2 tsp sea salt
♥ 1/3 cup brown sugar
♥ 1/3 cup honey
♥ 3 tablespoons coconut oil
♥ 1/4 tsp vanilla extract
♥ 3 tablespoons chia seeds
♥ Preheat oven to 350 degrees.
♥ In a food-processor (or blender) blend 1/2 cup of the almonds until they are very finely-chopped (think breadcrumb sized). Blend the other 1/2 cup until they are more coarsely chopped, or leave them as-is.
♥ Put the oats, almonds, brown sugar, chia seeds, and salt into a bowl and stir to combine.
♥ In a small bowl, combine the coconut oil and honey and microwave for 40 seconds. Stir to combine & add the vanilla extract.
♥ Pour the honey & coconut oil mixture over the oats and stir until granola is evenly-coated.
♥ Pour mixture on to a parchment lined baking sheet (I used a cookie tray).
♥ Bake granola for 5-7 minutes, then stir them. Then bake for another 5-7 minutes. I liked baking mine a little longer, so the granola is extra-crispy!
♥ After granola cools, break into chunks and store in an air-tight container or plastic bag.
It is SO yum-o, and the ingredients are simple and clean.
